Jowar Chocolate Brownie

**Ingredients:**

 

– 1/2 cup (115g) plant-based butter, melted

– 1 cup (200g) brown sugar

– 1/4 cup (60g) unsweetened applesauce

– 1/4 cup (60g) plant-based yogurt (unsweetened and unflavoured)

– 3/4 cup (90g) jowar flour (sorghum flour)

– 1/2 cup (60g) unsweetened cocoa powder

– 1 teaspoon baking powder

– 1/4 teaspoon pink salt

– 1/2 teaspoon ground cardamom

– 1/2 cup dry fruits (such as chopped nuts, dried cranberries, or raisins)

 

**Instructions:**

 

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  • In a mixing bowl, whisk together the melted plant-based butter and brown sugar until well combined.
  • Add the unsweetened applesauce and plant-based yogurt to the butter-sugar mixture. Mix until smooth.
  • In another bowl, combine the jawar flour, unsweetened cocoa powder, baking powder, pink salt, and ground cardamom.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  • Fold in the dry fruits (chopped nuts, dried cranberries, raisins, etc.) into the batter.
  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for approximately 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  • Remove the brownies from the oven and let them cool completely in the pan before slicing and serving.
